(More customer reviews)I have used the Viking Immersion Blender for about 6 months now, in a fine dining restaurant kitchen where it saw daily use almost exclusively to re-emulsify and foam sauces. As it was a $120 piece of equipment, it was very well taken care of and not abused or even used roughly. Unfortunately, this very expensive blender was unable to stand up to even the simplest possible of tasks. Plagued by mechanical problems from the moment of purchase, this was in fact the second such unit purchased for the restaurant; as the first had been returned under warranty for the exact same problem. The greatest issue with this device was the drive shaft, which continually fell away from the motor unit, making it produce extremely noisy grinding sounds (absolutely unacceptable in an open kitchen) when it did work, and non-functional the rest of the time. Pushing the blade end into the housing would make it work temporarily (for about 8 seconds), and then it would fail again. Naturally, the drive shaft housing is not user serviceable, making field-expedient repairs impossible.

Viking, when contacted was completely unconcerned, recommending we simply buy another unit. After all, if spending $120 doesn't get you a working piece of equipment, maybe spending $240 will! This device was hurled into the trash bin in the midst of a busy dinner service when it failed yet again.

This stands in stark contrast to the Cuisinart Smart Stick blender, which the garde manger station uses for pastry plating, pureeing soupsand sauces for amuse bouche, grinding nuts to make nut butter, mixing custards, and other normal immersion blender functions. It takes a daily beating, costs about $50, and the one we've had has been functioning perfectly for over three years.
